In Sicily, summer is a season of abundance, and few ingredients capture its flavour [flavor] better than pistachios, lemons, and olives. These Mediterranean staples grow generously under the Sicilian sun and are as revered in our kitchens as they are in our skincare.

Beloved across Sicily, pistachios are rich in antioxidants, healthy fats, and vitamin B6, supporting skin health and heart wellness alike. We use pistachio oil in skincare for its deeply nourishing and softening effects. In the kitchen, it adds a luxurious creaminess and subtle sweetness to both savoury and sweet dishes.

Main: Busiate with Shrimps & Pistachio Pesto

Ingredienzien:

400g busiate pasta
250g fresh prawns or shrimp, peeled
1 Knoblauchzehe
100g shelled Sicilian pistachios
A handful of basil
50ml extra virgin olive oil
Zest of 1 lemon
Salt & pepper to taste

Preparazione:

Blitz pistachios, basil, garlic, olive oil, and lemon zest into a rough pesto.
Cook pasta until al dente.
In a pan, sauté shrimp with olive oil until pink.
Toss cooked pasta with shrimp and pistachio pesto.
Serve warm, topped with crushed pistachios.

Dessert: Pistachio Granita

Ingredienzien:

250ml pistachio milk or finely blended pistachio paste
2 tbsp sugar (optional)
½ tsp vanilla extract
Crushed pistachios to garnish

Preparazione:

Mix pistachio milk, sugar, and vanilla until smooth.
Pour into a shallow tray and freeze.
Scrape with a fork every 30 minutes for 2–3 hours until fluffy.
Serve in chilled glasses with crushed pistachio topping.
